Each jar of FORGE sauce represents a minimum of 12 months from seed to seal. Our chefs operate less as cooks and more as chemical engineers, managing microbial growth and cellular breakdown to unlock depths of umami and complexity that cannot be rushed.

We control every variable: the specific temperature profile of the fermentation cellar, the humidity of the curing room, and the aging duration in small-batch earthenware vessels. This commitment is the price of genuine flavor.
